Recipe: Mushroom Pasta with Lemon Thyme in Tomato Sauce

Pasta is an all time favorite for everyone. We are sharing a simple recipe for pasta here that you can whip up in a jiffy. Prepare the pasta ahead and refrigerate, which makes the meal preparation even faster.
What you’ll need:
200g of small pasta, we’ve used thin macaroni
150g Button Mushrooms – Slice
2 cloves of Garlic- Slice
1/2 Can diced tomatoes (you could use fresh too, 2 large tomatoes blanched & peel removed)
Bunch of lemon thyme or other citrus herbs
2tbsp Olive Oil
50g Good quality Parmesan finely grated
How to do it:
In salted water put the pasta for boiling, cook for 8min for al dante, 9 for well done.
In a pan, heat olive oil, throw in the garlic, saute for 2min on a low flame.
Add mushrooms and cook for a min, throw in the spinach and diced tomatoes. Cover and cook for 3-4min.
Add drained pasta to the pan, mix well. Add the herbs and season with salt and pepper to taste.
Garnish with grated cheese and herbs, serve immediately.
