Don’t you just love to bake? The preparation, the lovely aroma that and the excitement of seeing a beautiful result, baking is just so much fun. Muffins are a sure win, especially in homes with kids, however they are not the healthiest things. Here’s a recipe which we love, especially because the guilt factor is way lower than usual muffins. We use less sugar and butter and instead use more blue berries and some Greek yoghurt, yes you got it right, greek yoghurt. These muffins are great with coffee in the morning or even as a snack. Hope you will enjoy them too.
Ingredients for 15 large muffins:
– 425 g self raising flour
– 1 tsp salt
– 200 g unsalted butter (room temperature)
– 270 g granulated sugar
– 4 eggs
– 2 tsp pure vanilla extract
– 200 ml sour cream
– 4 tbsp Greek yoghurt
– 125 g fresh blueberries
Preheat oven to 190C about 175C for fan assisted oven, with rack in upper third of oven. Line cups of a standard muffin tin with baking cups or use silicon cups.
Sift together flour and salt, keep aside.
Beat together butter and granulated sugar with a mixer on medium-high speed until pale and fluffy, 2 to 3 minutes.
Beat in eggs, 1 at a time, then beat in vanilla, scraping down sides of bowl.
Reduce speed to low, and gradually beat in flour mixture.
Mix in the sour cream and Greek yoghurt.
Fold in blueberries.
Put the mixture almost to top of the muffin cups and bake for about 20-25min, till a skewer inserted comes out clean.
