Couscous is undoubtedly one of my favourite grains, not only is it healthy is super quick to cook as well. The recipe that I am sharing today is as simple as simple can get, few simple yet awesome ingredients come together to create this beautiful, colourful, healthy ensemble.
What you’ll need for 2 Servings
Scallops 8 pieces (Thaw if frozen)
Snow Peas – De-vein
1 Orange – use a vegetable peeler to remove 4 strips of zest and thinly slice them
Olive Oil – 2tsp for couscous, 2tbsp for scallops and 2tsp for Snow Peas
1 clove of garlic – crush
In a bowl, mix the couscous, 2tsp olive oil, 1 crushed garlic clove and salt to taste. Add 120ml boiling water, cover with cling foil and let it rest.
In a non-stick pan add 2 tbsp olive oil and heat.
Once the pan is hot, gently add scallops, sear for 2-3min on each side.
Remove scallops, wipe the pan clean, add 2 tsp olive oil.
Add snow peas and orange strips, saute for 4-5min, add salt to taste.
In two plates divide the couscous, lay the snow peas with orange rind on top and finally add the scallops.
