Recipe: Chilli Con Carne

When I traveled to the US for work a year ago I loved the mexican food I got a chance to sample there, when i was back I craved for the same taste after a lot of experimentation this recipe came pretty close! It’s so versatile, goes well with fluffy white rice, crusty bread, tacos even jacket potatoes.
What you’ll need for 2 servings
300g Minced Beef
1 can of tomato puree or 2 large tomatoes chopped
1 medium onion chopped
1 clove of garlic
Vegetables – you could use peppers, carrot, celery
1 can of kidney beans
1/2 tsp cumin powder
1/2 tsp chilli powder
1/2 tsp cinnamon powder
1/4 tsp crushed pepper
Add 2 tbsp oil in a large skillet, add garlic and onion saute for a minute.
Add all the vegetables and saute for 5-6 min on medium heat
Add the spices, roast for 30sec
Add the beans and minced beef, cook for 4-5min
Add the tomatoes and a cup of water simmer for 7-8min
Generously garnish with coriander.
Serve with fluffy white rice or with tacos.
