Recipe: Miso Flavoured Soba

We all know Japanese food is healthy, but simple Japanese fare does not need to be restricted to expensive restaurants. Soba, or buckwheat noodles are a great quick fix dinner, the best part is these will go well with so many other Japanese dishes like teriyaki salmon or practically any seared meats in teriyaki sauces. To make this a complete meal by itself I like to grill a piece of chicken breast and shred it over the prepared soba. Simple, quick and yummy!
What you’ll need for 2 servings
200g Soba
2tbsp Miso paste
1tbsp Mirin
2tsp Japanese shoyu
1 Thai red chilli
1 small onion
1 Japanese cucumber
Hand full of pine nuts Or Grilled Chicken (optional)
Preparation
Boil the soba (per instructions on the pack) and refrigerate it, you could even use green tea soba, it tastes pretty awesome too.
Mix together the miso paste, mirin, shoyu and 2 tbsp water.
Cut in half by the length and core the cucumber, then cut thick slices
Cut thick slices of thai red cilli too
Peel and slice the onion
Shred the grilled chicken or whichever meat you prefer
Mix the sauses with soba and top with chilli, onion, and cucumber slices.
Mix in the shredded chicken or pine nuts.
Serve! Yes, it is this simple.
