Recipe: Black Beans & Avocado Crostini

While putting together the Mother’s Day Special Box, I re-looked at some recipes I had not made in days, and this is one of them. Not because it’s not as great but just because I’ve been cooking and shooting all these other fabulous recipes. This recipe is a big hit at my home and is a great one to serve as an appetizer for parties. The best part is most of the work can be done in advance so at the time of the party you literally assemble it in 5-10min.
What you’ll need for 2 servings:
1 Mini Baguette (slice)
1 Avocado, dice
1 Tomato, dice
1 Onion, chopped finely
1/2 can Black Beans
Salt & Pepper
2 tsp Oil
In a small pan heat 2 tsp oil, add onion and saute for a minute.
Add tomatoes and saute for 30sec. remove and let it cool to room temperature.
Mix the onion and tomato with Black beans and avocado, if not using immediately, cling wrap and refrigerate.
10min before serving, preheat oven to 205C (185C for fan assisted)
Toast the baguette slices for 3-4min until lightly browned
Spread butter on the slices and top with black bean avocado mixture.
