Recipe: Baked Potato & Sausage in Tomato Sauce

Since this is the month of school holidays for kids I decided to share this simple recipe which is a big hit with my 3YO. Its a simple dish, ready in a jiffy and is very yummy. Honestly, I rarely make it only for her. 🙂  

What you’ll need for 2 Servings:
1 Potato – thin slices
1 stick of celery (optional)
1/3 can of chopped tomatoes/puree
1tbsp sour cream or greek yogurt
1/2 onoin – finely chop
2tsp grated cheddar cheese
1 sausage (or if you are vegetarian take paneer or other vegetables like cauliflower)
1 slice of multi-grain bread
1 tsp oil (if not using sausage then 2 tsp oil)

Pre-heat oven at 200C (180C for fan assisted)
In a small non-stick wok, saute the sausage for 4-5min on medium flame
Now add onions and potato (if you like celery that’s a great addition too), saute for 3min until the vegetables are softened
Add chopped tomatoes or puree and sour cream, mix well, cook for 2min
Roughly chop the bread and lay at the bottom of a bake proof pot/dish
Layer it with the potato and tomato mixture, and finally lay the grated cheddar
Bake for 12min.
Ta-da!! Your awesome baked dish is ready to be served. Be careful though, its very hot from the inside, so serve in a plate and let it come to a more comfortable temperature.
