I love Thai food, the fresh ingredients just enhance the flavour of any meat. I am sharing one of my all time favourite recipes today – Thai Beef Salad, I tasted it for the first time in Phuket and just fell in love with it. After a lot of experimentation below is the combination of ingredients that works best for me. Serve the salad on the side of a thai meal or on the base of a healthy grain like quinoa and it’s a complete meal.
What you’ll need for 2 Servings
2 tbsp fresh lime juice
1 tbsp brown sugar
1.5 tbsp fish sauce
1 tsp sesame oil
2 tsp soy sauce
2 tsp finely grated ginger
1 clove garlic crushed
300g beef strips
1 Japanese Cucumber – half and thick slices
1 Tomato – dice
1 small red onion – thin slices
2 Thai red chillies – de-seed and chop
1 bunch of fresh coriander – leaves torn
2 tbsp toasted and crushed peanuts
Mix the first 7 ingredients to prepare the dressing.
Marinate the beef strips in 1/2 the dressing for 15min
In a large pan, take 2tbsp oil, saute the marinated beef strips for 6-7min.
Just mix them all up.
