Stir-Fry Chicken & Vegetables Recipe

J loves all things chicken and stir fry chicken dishes are my favourite too, not only they are super easy and quick to prepare, but also I find them easy to combine with different ingredients. I did a little twist on my usual broccoli chicken stir fry which was loved by all who tried it. Sharing the recipe today.

 

 

Ingredients:

300g diced chicken

2 tbsp oil

1 medium onion

2 celery sticks

1tsp ginger garlic paste

1tsp 5 spice powder

1 broccoli – make florets

1 carrot – slice

1.5 tbsp light soy sauce

1 tbsp chinese cooking wine

2 tbsp hoisin sauce

1 tsp cornflour

Directions:

Heat a non-stick wok, add 1 tbsp oil and swirl it around. Add diced chicken and stir fry until chicken turns white about 5-6min. Remove the chicken and keep aside.

Rinse the wok and dry with a paper towel, let it get hot and add 1 tbsp oil.

Add sliced onion, celery and saute for 1-2min, add ginger garlic paste and saute for 1min.

Add 5 spice powder mix well.

Add the vegetables, I used broccoli and carrots but you could also use peppers or cauliflower, saute for a few mins.

Add light soy sauce and chinese cooking wine, cook for 3-4min till vegetables are semi-cooked.

Add back the chicken, mix well.

Add hoisin sauce, mix well

Finally add the cornflour and water mix and cook for another min.

Serve hot. The dish pairs perfectly with steamed jasmine rice, but if you are going healthy try it with quinoa and its pairs just fine!

Tip for vegetarians: You could substitute the chicken with either paneer or stir-fry tofu, cook for only 2-3min in the start to get the perfect results.
